Current Favorites

Hi! I’m just popping in to say hello and share some pictures with you.

Here are a few of my favorite eats at the moment:

1. Apples with peanut butter/almond paste – I saw a picture here and had to try them! Really nice and also kind of weird!

2. Quinoa flakes for breakfast – I’ve been eating oats and such for breakfast for many weeks now, and it was time to try something new. The flakes taste very nutty and look like cute little springs ๐Ÿ˜€ I cook mine for about 5 minutes (1/3 cup flakes, 1 cup milk) and add honey for sweetness.

3. Watermelon!!! – one of my favorite fruit. I can imagine being able to eat a whole watermelon at one sitting. But here I had to make do with a quarter.

4. Home grown herbs remember my little “garden”? Some of the herbs are growing like crazy (parsley), some are very slow (oregano)… plus they’re baby herbs and there aren’t that many of them. But it’s so nice to be able to grab a few and put them in a salad. I’m planning on buying big plants though, especially basil and chives!

Eco shopping and yummy food

Good afternoon! How are you doing today?

Lately I’ve been full of energy and very inspired and motivated! Yesterday I decided to try Jillian Michael’s 30-DAY SHREDย and I must say, I got hooked! Today I did another workout of level 1 and it’s been great!

Ta-da! C’est moi. Wow, I look pretty slim here, but don’t be fooled, there’s a huge blob of fat around my waist and I mean HUGE.ย 

Obviously, hydrating is the key. It’s always a struggle for me because I can go hours without feeling thirsty so I have to constantly remind myself to drink. I dug out my gym bottle (previously mainly used to bring our own water when we were going to the cinema so that we wouldn’t have to spend ridiculous amounts of money on drinks there) and I’m planning on having it by my side all the time.

Anyway, I’d like to share with you some of my eats from today and yesterday!

First we have a lovely banana smoothie (vanilla yoghurt+banana) with some choco chips, flax seeds, wheat germs and whatnot. Soooo good and sooooo filling!

Yesterday I also tried the intriguing snack I saw over at Anastasia’sย ย if I’m not mistaken. Really nice!

In the evening I made this colorful pot of awesomeness – vegetarian chilli. The recipe is here.

Pretty good! I really liked it, but Chris didn’t seem especially excited about it… well too bad for him, cause we’ll be eating it again today (and there’s even more!) ๐Ÿ˜€

I also have to share another awesome breakfast with you! I saw it over at Ashley‘s and I just HAD TO make it! It’s a banana scramble – she put it on bread, I ate it as a pancake. The recipe is here.

Today I decided to finally go to our local Eco shop. Wait, no. I’ve already been there a couple of times. I decided to go there and BUY something.

Yay! I had to grab almond milk, almond butter, tofu, quinoa and mango chocolate. You have to know that I’ve never tried any of these and also, some of these things seemed super expensive. But oh well, I had to try them! My thoughts?

QUINOA – haven’t tried it yet. They only had quinoa flakes, so I’ll try breakfasts with them. No trace of regular quinoa, I have to look somewhere else.

ALMOND BUTTER – holy moly, I thought it’d be heaven for my tongue and it turned out to be quite… bitter I guess? Actually it’s an almond paste, so maybe that’s the difference.

ALMOND MILK – not sure if it’s actually the same kind of drink you all guys buy. It actually says ‘almond drink’ and not milk. It’s sweetened with agave. There wasn’t anything else of this sort so I thought I’d give it a try anyway. Yum! I can’t wait to make overnight oats with it tomorrow!

ORGANIC MANGO CHOCOLATE – actually I didn’t notice it said ‘white chocolate’ when I was buying it, I probably wouldn’t get it at all! But I’m glad I did, it’s so good and fruity!

TOFU – I know, I know, it’s weird I’ve never had it. I’ll definitely incorporate it into some stir-fry soon enough and will let you know how I liked it. To be honest, I had no idea what tofu to choose, there were so many of them!

Colors, nuts and saved yoga mats

Hi everybody! It’s been so warm and sunny lately, it makes me smile! And colorful breakfasts are a great way to start the day!

Fresh strawberries are still quite expensive, but I had to buy some and put them on my bread with vanilla sugar!

Today I had to go to ALDI again to stock up on some nuts! The one I’ve been to before had many more Trader Joe’s nut mixes to choose from it seems, but I have to be happy with what I got ๐Ÿ™‚ Look how sad my nut tin looked before, with all these lonely hazelnuts:

And now: om nom nom! (I have to be careful though, I tend to snack too much on nuts!)


Yesterday we went to the cinema to see ‘Barney’s Version’. On the way there, we were passing a couple of dumpsters, where some guy was throwing away some bigger stuff. I saw that he was holding a thick mat and I swear, he was already dropping it when I gave out a series of weird noises (something like ‘eeh-eeh-eeh-eyyy’ probably!) and caught his attention. I asked him if I could have it and he said sure, and that it was brand new but he didn’t have space for it. So, I have a thick mat now for exercising at home! I bought a yoga mat a long time ago (not that I do yoga, haha!) but it’s so thin it hurts! I can’t wait to try this one out! Although it’s probably just a sleeping mat, not an exercise one ๐Ÿ˜‰

This week I’m planning on doing some exercising at home and maybe go to the gym for some cardio (I have some terrible nerve pain in between my ribs so I’m afraid to do any strength work out). I hope it works out!

Good Food

My laptop’s adapter died yesterday, so I am forced to use Christiaan’s laptop which is over 5 years old (how can a laptop be that old? my laptops survive only about 3 years :P) and is sloooow. I don’t like typing on someone else’s keyboard, but it looks like I’ll have a new adapter tomorrow, yay!

I’ve had a couple of super yummy things lately! First of all – my breakfast today!

Overnight oats with coconut milk, raisins and cinnamon+ an apple+coffee+good magazine to read= a great morning!

After my very tiring Dutch lesson of almost 2 hours, all I was thinking about on the way back was lunch! I had a huge craving for some veggies and crackers, so:

Herb crackers, orange bell pepper (new favorite!), cucumber, lots of rucola (looove it!), goat cheese, pine nuts and my new obsession , HUMMUS! Can you believe I have JUST discovered it?

You know this feeling when you eat just a little piece of something greasy and you’re full and icky? Well, go for a huge plate of veggies and you will know what “nicely satisfied” means! I had that ginormous plate of food for dinner yesterday:

Rucola, carrot, cucumber, orange bell pepper, radish, vegetable balls and brown rice. It was filling in this nice and healthy way!

And the last one: tagliatelle with red pesto, chicken, courgette, nuts and tomatoes. SO GOOD!

Oh, and I made another batch of these muesli bars indeed. And you know what? They’re gone, too! Oops ๐Ÿ˜‰

Excited!

What a day!

I’ve been waiting for today for a long time because I knew tickets for my favorite band’s series of concerts would go on sale. I wasn’t expecting to get even one, but I got lucky and got tickets for 4 nights! So June will be full of music, friends and wandering around London, yay!

But before the big excitement there was my breakfast. I love overnight oats right now and I love how I can put all these things in them and they’re different every morning. Last night I made mine with coconut milk and a little bit of regular milk, and in the morning I added pear and kiwi and had a piece of banana bread on the side.

Lunch was fast and easy: whole what bread with lean ham and cress. Cress is one of my favorite things right now and I can eat it everyday, all day!

I almost forgot to go shopping because of all this craziness today! And when I did go, I brought two bags I could barely carry.

I bought: milk, leek, spinach, potatoes, Naan bread, Indian Curry sauce, tangerines, orange bell pepper, tomatoes, lean ham pieces, coconut milk, whole wheat bread, red lentils.

I was planning on making lentil soup today, but Chris came back home earlier and was so hungry that I decided to make a quick quiche.

It has loads of spinach, some ham, orange bell pepper, onion, courgette and low fat cheese. SO GOOD! Chris had two servings, so that means no food for him tomorrow! ๐Ÿ˜›

Tomorrow I’m visiting my sister for her birthday, so maybe some pictures of Amsterdam (and its food) will follow!

Bananas over banana bread!

I have no idea how it happened, but we went to sleep at 4am last night. There are weekend nights like that sometimes, when we just hang out in front of our laptops, listen or play music until we drop. I like them!

My breakfast was so yummy today! Thanks to Anastasia I discovered overnight oats – so good and filling! I make mine with normal milk and 0% fat vanilla yoghurt, but I’m going to try coconut milk next time. I’m dreaming of almond milk, but I can’t find any here for the life of me :/ Today’s oats were spiced up with cinnamon – now, I am not a big fan of cinnamon and when I put it in my bowl yesterday night I started regretting it right away, but in the morning it was really good somehow ๐Ÿ˜› I topped the oats with frozen fruit and fresh banana, mmm…

Then we met up with Christiaan’s mom and went to a fabric market. Too bad I didn’t take my camera, there were so many cute colorful fabrics for only โ‚ฌ3 per meter! Hard to believe (especially to someone who knows how obsessed I am with scrapbooking/sewing), but I didn’t buy anything! But the market travels from city to city and I will definitely catch it sometime later.

After a day well spent outside I had so much energy, that I started cleaning the kitchen.ย  And hoovered the whole house. And then baked banana bread.

Banana bread

3 ripe bananas (I used two and it was fine)

2 eggs

2 cups flour

3/4 cup sugar (I used cane sugar)

1 teaspoon baking soda

a little bit of salt

nuts ( I used almonds)

Mash bananas and eggs together. Add the rest of ingredients and mix them together. Bake at 175 C (347 F) for about an hour (mine was done after 35 minutes, but my over is crazy fast).

Chris loves banana bread and he got so excited about it, that this is what’s left of it after 5 hours:

I only had a couple of pieces – so good! But I still prefer muffins ๐Ÿ˜‰

When it came to making dinner, I was still pretty inspired and energetic, so I decided to makeย  something with theย  risotto/paella rice that’s been sitting in my cupboard forever. I remember how my ex boyfriend fried this rice and then cooked it until it would get all mushy, but I couldn’t remember or find the proportions. Well, I just did whatever I thought was right and it took me about an hour to get this freaking rice to be relatively soft. Still not perfect.

Pwetty! So we have the non-perfect rice with oregano and basil, a vegetable burger (I love meat substitutes!) and a colorful load of raw veggies.

Actually, I just figured out today that my view on vegetables has changed dramatically in the past months. I was never really a veggie person, but now I CRAVE them! Good for me I guess?
